A filling, protein rich breakfast. Great with plain yogurt and fruit! keeps in fridge or freezer for several days.

Recipe Ingredients for Cottage cheese pancakes

4 eggs
3/4 cup lowfat cottage cheese
2 tablespoons vegetable oil
1/2 tsp Vanilla
1/3 cup whole wheat flour
1/4 tsp salt
2 tbls flax seed

Recipe Directions for Cottage cheese pancakes

  1. blend cottage cheese in blender

  2. add eggs, oil, vanilla, salt & flax

  3. blend till smooth

  4. add flour

  5. pulse just until blended

  6. heat skillet and pour 1/4 cup scoops to make 10 small pancakes
