From the eating clean cookbook. Don't have maple sugar flakes so I used a splenda blend.

Recipe Ingredients for Cottage Cheese Pancakes

1 1/4 c whole wheat flour
1 tsp baking powder
2 tbsp sugar
1/2 tsp ground cinnamon
1/4 tsp sea salt
8 egg white, room temperature
1 c fat free cottage cheese
1 c fat free plain yogurt

Recipe Directions for Cottage Cheese Pancakes

  1. Combine first 5 ingredients in med. bowl.

  2. Combine eggs, cottage cheese and yogurt in small bowl. Pour into dry ingredients and mix until just moist.

  3. Heat pan or griddle (medium high). Spray with olive oil.

  4. Use 1/4 c of batter for each pancake.

  5. Cook until light brown.

  6. Serve with warm fruit.
