Recipe Ingredients for Cottage Cheese Pancakes

2 eggs, separated
1 cup buttermilk
1 cup cottage cheese
4 tbsp butter
1 tsp vanilla
1/2 tsp nutmeg
1 tbsp splenda
1/4 tsp salt
1/2 tsp baking soda
1 cup flour

Recipe Directions for Cottage Cheese Pancakes

  1. Whisk egg yolks and buttermilk together.

  2. Stir in rest of wet ingredients.

  3. Add dry ingredients and whisk together until just blended.

  4. Beat egg whites until they form soft peaks.

  5. Fold egg whites into the batter.

  6. Drop 1/4 cup per pancake onto skillet. Cook about 4 minutes on first side, then briefly on the other.
