Makes 12 servings



cottage cheese muffins with sundried tomatoes. yum! Great served with tomato soup for lunch or brunch.

Recipe Ingredients for Cottage Cheese Muffins

1 c cottage cheese, low fat
3/4 c parmesan cheese
1/4 c flour
1/4 c sliced almonds
1 tsp baking powder
1/4 c sundried tomatoes
1/4 c fresh basil
1/4 c water
4 eggs, beaten
1/2 teaspoon salt

Recipe Directions for Cottage Cheese Muffins

  1. Mix all ingredients together, pour into 12 LINED muffin tins (these tend to stick really bad to the pan - lining the muffin tins works much better than using a cooking spray).

  2. Bake in 350 oven for about 20 min, or until a toothpick inserted comes out clean.
