Recipe Ingredients for Cottage Cheese Muffins

3 tbsp margarine
1 1/4 cup low-fat cottage cheese
1/2 c light sour cream
2 eggs
1 cup flour
2 tsp baking powder
1/4 cup sugar

Recipe Directions for Cottage Cheese Muffins

  1. Spray muffin pan. Preheat oven to 400.

  2. Combine all ingredients in a bowl until fairly smooth, but a little lumpy.

  3. Bake at 400 until golden, about 18 minutes.

  4. Makes 9 muffins.

  5. Serve with yogurt and sliced strawberries.

  6. Freezes well.

  7. To brighten flavour: add lemon or orange zest, cranberries, raisins, etc. as you please
