Recipe Ingredients for Cottage Cheese Muffins

3 tbsp. margarine
1 1/4 cups fat free cottage cheese
1/2 cup fat free yogurt
2 eggs
1 cup flour
2 tsp. baking powder
1/4 cup sugar
1/2 cup cranberries

Recipe Directions for Cottage Cheese Muffins

  1. Preheat oven to 400F.

  2. Spray a muffin pan with non-stick spray.

  3. Combine all ingredients in a mixing bowl or food processor. Blend until fairly smooth. The mixture will be a little lumpy, but that?s OK.

  4. Divide mixture evenly among muffin compartments. Bate at 400F until golden, about 25 minutes.

  5. Cool slightly and remove gently from pan.

  6. Delicious with yogurt and sliced strawberries.

  7. Yield: 10 muffins. They freeze well.
