Recipe Ingredients for cottage cheese muffins

1 1/2 cups flour, all-purpose
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 cup vegetable oil
1/8 cup applesauce, no sugar added
1/4 cup brown sugar, packed
1 egg
1 cup cottage cheese (low-fat 1%)
1/2 cup milk, 1%

Recipe Directions for cottage cheese muffins

  1. Mix oil, apple sauce, and sugar together

  2. Mix in the cheese and milk

  3. Mix in dry ingredients until all moist

  4. Bake at 375 degrees in a 12-muffin pan for about 20 minutes or until they bounce back when you press on the tops
