Cottage Cheese Fritatta with Chicken Sausage

Recipe Ingredients for Cottage Cheese Fritata with Asiago & Spinach Sausage

15 eggs
1 cup low-fat cottage cheese
2 cups spinach
2 squash
2 scallions
2 tsp basil
1/4 tsp nutmeg, fresh
2 tbsp butter
1 2/5 oz parmesan cheese
2 links spinach and asiago chicken sausage

Recipe Directions for Cottage Cheese Fritata with Asiago & Spinach Sausage

  1. Chopp Onion & garlic. Heat butter & add onion to pan. Then add garlic. Cook until fragrant

  2. Add squash to pan

  3. Add spinach & scallions

  4. Mix eggs, cottage cheese, basil, nutmeg

  5. Cook sausage links and set aside. Slice when ready to add. Add to pan

  6. Add eggs to mix, and cook until slightly set.

  7. Cook in 350 degree oven until set

  8. Sprinkle parmesan Cheese on top and put back in oven until top is golden brown
