Recipe Ingredients for Corsican-style Lamb Ragout

1/4 cup olive oil
3/4 kg lamb shoulder
3/4 kg lamb shank
2 1/2 cups red wine
3/4 lb tomato
1/2 cup hot water

Recipe Directions for Corsican-style Lamb Ragout

  1. Chop the lamb into pieces, peel, seed and chop the tomatoes and crush the garlic cloves.

  2. In a large casserole heat the oil over medium heat. Brown the lamb on all side, add half a cup of wine and let it nearly evaporate (about 10 minutes). Season with salt and pepper and reduce the heat to low. Add the tomatoes, bay leaves and garlic and cook for a further 2 minutes, stirring to blend. Pour in the remaining wine, the hot water and the orange zest, cover and cook until the meat is falling of the bone (about three hours).

  3. Discard the bones and the bay leaves before serving.
