Nice alternative for a saturday morning trip to the local pancake house. Low fat and fresh to boot. Serve with just a little butter melted in maple syrup. As a vegetarian (ovolacto), I also serve with veggie breakfast sausaage.

Recipe Ingredients for Corny whole wheat pancakes

1/3 cup whole wheat flour
2 tbs. corn meal
2 tsp. sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/3 cup skim milk
2 tbs. skim milk
1 tsp. vinegar
1 tsp. safflower oil
3 tbs. egg white

Recipe Directions for Corny whole wheat pancakes

  1. Mix dry ingredients.

  2. Add vinegar to skim milk and add wet ingredients.

  3. Cook in a med. hot nonstick skillet.
