You can use any self-rising cornmeal mix with any self-rising flour.

Recipe Ingredients for Corny Corn Muffins

1 cup Cornmeal, Self-rising, Bolted
3/4 cup Wheat Flour, White, All-purpose, Self-rising, Enriched
1/4 cup vegetable oil
1 cup creamed corn
2 large eggs
1 cup light sour cream
2 tablespoons sugar

Recipe Directions for Corny Corn Muffins

  1. Preheat oven to 375 degrees and grease or spray with a non-stick spray a 12-cup muffin tin. (If you like a crispy edge around your muffins, preheat the tin in the oven until the grease is very hot.)

  2. Combine all ingredients in a medium bowl and stir until moistened. Do not overmix.

  3. Fill the muffin cups 3/4 full with batter and bake for about 20 minutes or until golden brown.
