Healthy cornmeal pancakes with real bits of corn tucked inside. Top with blackberries or blueberries while cooking.

Recipe Ingredients for cornmeal yogurt pancakes

1/4 cup whole wheat pastry flour
1/4 cup all purpose flour
1/8 cup oat flour
3/8 cup cornmeal
1/4 t salt
1/4 t baking soda
3/4 t baking powder
1 T turbinado sugar
1 egg
1/2 oz Greek, Non-Fat, Plain Yogurt
1/8 c corn kernels

Recipe Directions for cornmeal yogurt pancakes

  1. mix all dry ingredients together thoroughly.

  2. In a separate bowl, combine yogurt, egg and milk.

  3. Add wet ingredients to the dry and mix until just combined.

  4. Fold in corn kernels.

  5. Cook in 1/4 cup batches in a skillet over med-high heat.

  6. As soon as you pour batter on skillet, top each pancake with a few berries.

  7. When edges appear dry and bubbles form on top, flip pancake. Cook for a few more minutes.
