Recipe Ingredients for Cornmeal Rosemary Cake with Pine Nuts

1 cups flour
3/4 cup cornmeal
1/3 cup pine nuts
1 tbsp. rosemary
1 tbsp. orange zest
1 tsp. baking powder
1/4 tsp. kosher salt
2/3 cup mascarpone
4 large eggs
1 cups granulated sugar
1/2 cup unsalted butter

Recipe Directions for Cornmeal Rosemary Cake with Pine Nuts

  1. Position a rack in the center of the oven and heat the oven to 350F. Butter a 9x2-inch round cake pan, line the bottom with a round of parchment, and butter the parchment.

  2. In a medium bowl, whisk together the flour, cornmeal, pine nuts, rosemary, orange zest, baking powder, and salt.

  3. In a large bowl, briefly whisk the mascarpone to loosen it. Add the eggs one at a time, whisking to combine. Add the sugar and whisk until smooth. Using a rubber spatula, fold the dry ingredients, in two batches, into the wet ingredients, mixing until smooth. Stir in the melted butter with the rubber spatula until blended.

  4. Scrape the batter into the prepared pan, spread evenly, and bake until the entire top of the cake is a rich golden brown and springs back when pressed gently in the center, 40 to 45 minutes. A skewer inserted in the middle of the cake should come out looking a bit moist, and the sides of the cake may have begun to pull away from the pan.
