A very warm Jamaican favorite. Excellent start for those cold mornings. Great for kids, and very satisfying.

Recipe Ingredients for Cornmeal Porridge

1 cup cornmeal
1 cup 2% milk
3 1/2 cups water
1 tbsp unsalted butter
3/4 tsp salt
3 tbsp condensed milk
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tsp vanilla

Recipe Directions for Cornmeal Porridge

  1. Combine cornmeal and 1 cup of water in a bowl.

  2. Bring the salt, milk, and 2 cups of water to a boil.

  3. Reduce heat and add cornmeal mixture to the pot. Cook for 10-12 minutes stirring constantly. (The bottom will stick otherwise)

  4. If porridge is getting to thick then gradually add the remaining 1/2 cup or water until satisfied with the consistency.

  5. Add butter, nutmeg, cinnamon, vanilla, and condensed milk. Turn off heat and mix completely.

  6. Serve immediately and enjoy.
