Recipe Ingredients for Cornmeal Pancakes

1/2 c corn meal
1 1/4 cup corn flour
1/4 c whole wheat flour
2 tbs ground flaxseed
1/2 tsp salt
2 tbs vegetable oil
2 tsp baking powder
1 1/4 c whole milk
1/3 cup lemon juice
1 tsp vanilla
2 tbs maple syrup
2 tsp orange zest
1 c frozen blueberries

Recipe Directions for Cornmeal Pancakes

  1. Mix dry ingredients and wet ones in separate bowls, then mix wet into the dry slowly without overworking.

  2. Stir in blueberries last.

  3. Cook pancakes 4 minutes each side on a nonstick skillet over medium heat.
