Recipe Ingredients for Cornmeal Pancakes

0.33 cup Applesauce
1.25 cup Cornmeal, Degermed, Enriched, White
2 large Egg, Whole
1 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
2 serving Huckleberries
1/4 tsp Baking Powder
1 dash Salt, Table

Recipe Directions for Cornmeal Pancakes

  1. Mix together dry ingredients in a large bowl.

  2. Blend wet ingredients together, then add to the dry.

  3. Mix well.

  4. Spoon onto a hot Pam-sprayed skillet and sprinkle on the huckleberries.

  5. Cook until hot and bubbly, then turn and let cook for another minute.

  6. Transfer to slightly warm oven and cook remaining cakes.

  7. Serve with applesauce.
