A delicious breakfast, inspired by my one True Love.

Recipe Ingredients for Cornmeal Pancakes

2/3 cup cornmeal
2 cups whole wheat flour
1 1/2 cups water
1 1/4 cups low fat milk
1/3 cup sugar
1 tsp kosher salt
1 tsp baking powder
1/2 tsp baking soda
1 egg, beaten
3 tbsp oil
1 tbsp butter

Recipe Directions for Cornmeal Pancakes

Combine all dry ingredients. Combine cornmeal and water and bring to a boil, then simmer 5 minutes. Stir in the milk, then 2 Tbsp of the oil. Combine wet and dry ingredients, adding more milk if necessary to get the right consistency. Do not overbeat. Melt together the butter and remaining oil on the griddle and fry away as necessary. Should create about 24 pancakes.
