Recipe Ingredients for Cornmeal Pancakes

1 cup boiling water
3/4 cup cornmeal
1 cup 1% milk (mixed with 1 tbsp. white vinegar)
2 eggs
1 cup whole wheat flour
1 tbsp. baking powder
1 tsp. kosher salt
1/4 tsp. baking soda
1/4 cup canola oil

Recipe Directions for Cornmeal Pancakes

  1. In a mixing bowl, pour boiling water over cornmeal. Stir and allow to sit for 5 minutes, stirring once or twice.

  2. Pour in milk. Add eggs, beating after each addition.

  3. Whisk flour, baking powder and salt together. Stir into cornmeal mixture. Add oil.

  4. Beat for 30 seconds or just stir to mix.

  5. Pour batter onto hot griddle or large skillet wiped lightly with butter or oil. Bake for 1-2 minutes per side flip once.
