This recipe is very versatile; If you like sweeter pancakes, add 1 tbsp of sugar; These are also good with 1 cup of blueberries, or try any other kind of fruit or spices like cinnamon for extra flavor. Just be sure to add the calories for whatever you add. Makes about 10 pancakes.

Recipe Ingredients for Cornmeal Pancakes

1/3 cup spelt flour
3/4 teaspoon baking soda
1 1/8 cups cornmeal
1 egg, beaten
1 1/8 cups low fat buttermilk
1 teaspoon almond extract

Recipe Directions for Cornmeal Pancakes

  1. Combine flour, baking soda and cornmeal.

  2. Add egg, buttermilk and almond extract. Stir until just mixed.

  3. Pour by 1/4 cup into a hot pan.

  4. Cook until bubbles appear, flip.
