Light, thin, moist pancakes with good flavor.

Recipe Ingredients for Cornmeal Pancakes

1 cup all-purpose flour
1/3 cup yellow cornmeal
1 tbsp sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 large egg
1 cup skim milk
1 tbsp molasses
1 tbsp butter, melted

Recipe Directions for Cornmeal Pancakes

Combine dry ingredients and mix well. Combine wet ingredients in separate bowl. Add wet to dry and mix well. Let mixture sit for a couple of minutes. Use an ice cream scoop to make 15 pancakes.
