Light and fluffy. I decreased the amount of oil, and they still taste great. You can lighten further by substituting egg whites or eggbeaters for the eggs, and stevia for sugar.

Recipe Ingredients for Cornmeal Pancakes from Dannon Light & Fit

1 c flour
1/2 c cornmeal
3 T sugar
2 t baking powder
1 t baking soda
1/8 t salt
1 1/2 c nonfat yogurt, light & fit vanilla
2 eggs
1/8 c vegetable oil

Recipe Directions for Cornmeal Pancakes from Dannon Light & Fit

  1. Combine dry ingredients in a medium bowl.

  2. Mix together yogurt, egss and oil. Add to dry ingredients, stir until blended.

  3. Pour 1/8 c batter onto greased, preheated skillet or griddle over medium to med-low heat. Cook about 3 minutes until golden brown; flip and cook another minute.

  4. Serve immediately or keep warm in 250' oven.

  5. Serve with warm maple syrup.

  6. Makes 16 pancakes. 2 pancakes per serving.
