Delicious muffins for anytime. Uses oat flour for part of wheat flour.

Recipe Ingredients for Cornmeal and Oat Muffins

1 c. cornmeal
1/2 c. whole wheat pastry flour
1/2 c. oat flour
4 tsp. baking powder
1 1/4 c. buttermilk
2 T. molasses
1 large egg
1/4 c. canola oil

Recipe Directions for Cornmeal and Oat Muffins

  1. Mix cornmeal, pastry flour, oat flour and baking powder well in a medium sized bowel.

  2. Add buttermilk, egg, molasses, egg and oil in that order. Mix until well blended but do not over mix.

  3. Spoon into greased muffin cups or tin. Bake at 425 for 20 minutes, or convect bake at 400 for 20 minutes.
