Recipe Ingredients for Cornmeal Muffins

2 cups cornmeal
1 cup whole wheat flour
1 cup white flour
1 1/2 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda
1/2 pound tofu
1 1/2 cups water
1/4 cup oil
3 tbsp. honey or maple syrup

Recipe Directions for Cornmeal Muffins

  1. Pre heat oven to 425 degrees F.

  2. Mix together dry ingredients.

  3. Blend tofu and water in blender until smooth

  4. Pour tofu mixture, oil and honey into dry ingredients. Stir until moistened. Fill oiled muffin tins 3/4 full.

  5. Bake for 15-20 minutes or until golden brown.
