Recipe Ingredients for Cornmeal muffins

1/2 cup butter, softened
1/2 cup white sugar
1/4 cup honey
2 eggs
1 cup whole wheat flour
1/2 cup white flour
3/4 cup yellow cornmeal
1/2 tsp baking powder
1/2 cup skim milk
3/4 cup frozen corn kernels, thawed

Recipe Directions for Cornmeal muffins

Preheat oven to 400F. Spray 12 cup muffin pan with vegetable spray. Ina large bowl, cream together the butter and sugar. Beat in the honey and eggs. Mix in flour, cornmeal and baking powder. Stir in milk until batter is smooth. Fold in corn. Spoon into prepared muffin cups. Bake 20-25 minutes or until tops of muffins are lighly browned.
