(I turned half the granny smith apple into 1/4 cup apple sauce with the lemon juice, and used it as a substitution for 1/4 cup oil.)

Recipe Ingredients for Cornmeal Muffins

1 3/4 cup cornmeal
1/4 cup whole wheat flour
3 tbsp. honey
2 tbsp. flaxseed, ground
6 tbsp. water
1/4 tsp. salt
1/2 cup skim milk
1 tbsp. baking powder
1/2 granny smith apple
1/2 tbsp. lemon juice

Recipe Directions for Cornmeal Muffins

  1. (Soak flaxseed with water until absorbed, then:

  2. Mix all ingredients & bake @ 400 Degrees F for 15 minutes.

  3. Makes 12 muffins.)
