I substituted apple sauce for vegetable oil and reduced the amount of sugar in this recipe to make it lower in calories. It still tastes great

Recipe Ingredients for cornmeal low fat cake

2 cups cornmeal
2 cups low fat milk
1/2 cup apple sauce
1 1/4 cup of sugar (I used 1 cup of sugar and 1 cup of Whey Low sweetener- it has 25% of calories in sugar)
1 tbsp baking powder
4 eggs

Recipe Directions for cornmeal low fat cake

Mix milk, cornmeal and sugar in a pot. Cook on low until it starts to bubble. Turn off the heat and let it cool. When it is cool whip the egg whites and reserve. Mix the egg yolks and the apple sauce to the cornmeal mush. Mix in the baking powder. Fold in the whipped egg whites. Spray a 9x11 baking sheet with Pam (the one with flour works best). Bake in the oven at 350F until toothpic inserted in the middle comes out clean. Let cake cool before cutting it into 24 pieces (4x6).
