Recipe Ingredients for Cornmeal-Crusted Chicken

1/2 cup natural yoghurt, low fat
1/2 cup cornmeal
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon chilli powder
400 grams of chicken breasts, skinless, boneless

Recipe Directions for Cornmeal-Crusted Chicken

  1. Preheat oven to 200 degrees. Coat a baking sheet with nonstick cooking spray.

  2. Pour yoghurt into a shallow bowl.

  3. Combine cornmeal, pepper, cumin and chili powder on a plate.

  4. Dip chicken in yoghurt, then dredge chicken breasts in cornmeal mixture and place on baking sheet.

  5. Bake for 20 minutes, turning once.

  6. Serve with fresh salsa, corn and rice.
