Recipe Ingredients for Cornmeal Cheddar Scones

3/4 cup buttermilk, 1%
1/4 cup cornmeal
1 cup all purpose flour
1/2 cup whole wheat flour
1/4 cup wheat germ
1 tbsp baking powder
1 tbsp sugar
3/4 tsp salt
1/4 cup butter, cold cut into cubes
1 cup low fat cheddar, shredded
67 1/2 grams honey ham, diced (about 1/2 cup)
2 green onions, sliced
1 egg white
2 tbsp cornmeal

Recipe Directions for Cornmeal Cheddar Scones

  1. Preheat oven to 400 F. Lightly spray or coat rimmed baking sheet with oil.

  2. In a medium bowl, add buttermilk and 1/4 cup of cornmeal and stir to combine.

  3. In a large bowl, stir flour with baking powder, sugar and salt. Work in butter with fork, fingers or pastry blender until flour mixture is crumbly. Stir in cheese, ham and onions.

  4. Whisk egg into buttermilk mixture. Then pour into flour mixture. Using a wooden spoon, stir until just combined. Gently gather into a ball and divide into 2 equal portions.

  5. Sprinkle remaining 2 tbsp cornmeal on cutting board. Place one portion of dough on top and gently pat into a 6 inch circle. Cut into 6 wedges. Repeat with remaining dough, pressing into remaining cornmeal on counter before cutting.

  6. Place wedges on baking sheet 1 inch apart. Lightly brush with buttermilk if desired. Bake in centre of oven until lightly golden, about 14 to 16 minutes.

  7. You can prepare scones ahead of time. Freeze scones, uncooked and uncovered, while on baking sheet until firm. Place in a freezer bag and keep, frozen, up to 1 month. To bake, remove scones to a baking sheet, defrost uncovered for 1 1/2 hours. Bake as above.
