Recipe Ingredients for Cornmeal & Butternut Squash

1 winter squash, small butternut
1 cup cornmeal
3 cups water

Recipe Directions for Cornmeal & Butternut Squash

  1. Peel the squash and cut into cubes. Place in pot and just cover with water. Boil until squash is soft.

  2. Mash the squash in the boiling water.

  3. Mix the cornmeal with 1 cup of water. Add this to the mashed squash. Simmer on low, covered for 1 hour, stirring regularly. Add salt to taste.
