Homemade Cornmeal, Blueberry Muffins

Recipe Ingredients for Cornmeal, Blueberry Muffins

1 cup Cornmeal, Whole-grain, Yellow
6 serving compliment whole wheat flour
1 large Egg, Whole
1 cup Milk, Nonfat, Fluid
8 tsp Unico Sunflower Oil
4 tsp Baking Powder
8 tsp No Calorie Sweetener
1 cup, unthawed Blueberries

Recipe Directions for Cornmeal, Blueberry Muffins

Heat oven to 450F (230C) and grease 12 large muffin cups. Beat egg in mixing bowl and stir in oil, milk and cornmeal. Add remaining ingredients into cornmeal mixture and stir only to blend (batter should be lumpy). Spoon into prepared muffin cups 2/3 full. Bake until lightly browned, 15 to 20 minutes. A mashed banana can be used instead of blueberry.
