Like a normal biscuit, but with cornmeal.

Recipe Ingredients for Cornmeal Biscuits

1 1/2 cups flour
5 tbsp. yellow cornmeal
2 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. salt
1 1/2 tbsp. sugar
6 tbsp. butter, chilled and cut into 1/2" pieces
3/4 cup lowfat buttermilk

Recipe Directions for Cornmeal Biscuits

  1. Heat oven to 400 degrees. In a medium bowl, whisk together flour, cornmeal, baking powder & soda, salt and sugar. Using a pastry cutter, cut butter into flour mixture. Using a wooden spoon stir in buttermilk until the mixtures holds together.

  2. Line a baking sheet with parchment paper or silpat. On a lightly floured surface roll out dough to a 1" thickness. Using a 2" round biscuit cutter or glass cut out eight rounds and place on prepared sheet. Brush tops with buttermilk if desired. Bake until golden and puffy, about 12 minutes. Serve warm.
