Using ground cornflakes is a reasonably healthy alternative to making traditional fried chicken, with still lots of tasty, crunchy flavor.

Recipe Ingredients for Cornflake Crusted Chicken

1 lb Boneless, Skinless Chicken Breasts
1 Egg White
1 cup Cornflakes
2 tbsp Parmesan Cheese
1 tsp Black Pepper
1 tbsp Paprika
4 tbsp Margarine Non Hydrogenated Low in Saturated Fat

Recipe Directions for Cornflake Crusted Chicken

  1. Grind up cornflakes in a food processor, blender or by hand with a rolling pin between wax paper.

  2. Pre-heat oven to 425 degrees.

  3. Trim excess fat from chicken breasts.

  4. Put egg white in a shallow dish and whisk together with a little water.

  5. Combine ground cornflakes, parmesan and paprika in another shallow dish.

  6. Dip chicken breasts in egg white, then cornflake mixture and place on a baking sheet sprayed with non-stick cooking spray.

  7. Melt margarine and drizzle a little over each piece of chicken.

  8. Bake for 25-35 minutes, or until juices run clear when pierced with a fork.
