Mmmmmmm... almost as good as potato chippers :)

Recipe Ingredients for Cornflake Cookies (70's)

1 cup butter
1/2 cup canola oil
1/2 cup applesauce
1 cup white sugar
1 cup brown sugar
1 egg
1 cup Fiber one, USE 2 cups honey clusters
1 cup walnuts, chopped
1 cup oatmeal, ground
3 cups whole wheat pastry flour
1 tablespoon baking soda
1/2 teaspoon salt, 2 teaspoons vanilla extract

Recipe Directions for Cornflake Cookies (70's)

  1. Preheat oven to 325.

  2. Cream butter, sugars and egg. Add oil and applesauce.

  3. Mix in dry ingredients.

  4. Form dough into walnut sized balls.

  5. Place on parchment lined cookie sheet and flatten with a fork dipped in water.

  6. Bake for 10- 12 minutes. Cool on pan for a minute or two, then transfer to a rack to cool fully.
