Corned Beef Hash Recipe

Taken from Williams-Sonoma's "Comfort Food" cookbook. To make red flannel hash, substitute one or two cooked beets for one of the potatoes. For a spicy hash, add one jalapeņo chile, seeded and chopped, to the food processor with the hash.

Recipe Ingredients for Corned Beef Hash

2 large red potatoes
1 lb corned beef, chopped
1 yellow onion, coarsely chopped
1/2 red bell pepper, seeded and coarsely chopped
6 eggs, poached
2 tbsp unsalted butter
1 salt and pepper to taste

Recipe Directions for Corned Beef Hash

  1. In a saucepan, combine the unpeeled potatoes with slated water to cover by 1 inch, cover the pan and bring to a boil over high heat. Uncover, reduce the heat to medium-low and simmer until tender when pierced with a knife (about 20 minutes). Drain, rinse under cold running water and let cool completely. Peel the potatoes and cut into 1/2-inch chunks. You should have about 2 cups of potato chunks.

  2. In a food processor, combine the potatoes, corned beef, onion and bell pepper. Pulse a few times, just until the ingredients are coarsely chopped and well mixed. Do not mince them. Season generously with salt and pepper.

  3. Poach the eggs and keep them warm in hot water as needed.

  4. In a large frying pan, melt the butter over medium-high heat. Divide the corned beef mixture into 6 equal portions and shape each portion into a patty about 3/4-inch thick. Place the patties in the hot pan and fry until browned on the bottom (about 4 minutes). Turn and brown the second sides (about 4 minutes more).

  5. To serve, place a patty on each plate. One at a time, using a slotted spoon, remove the poached eggs from the hot water, resting the bottom of the spoon briefly on a clean kitchen towel to blot excess moisture, and place an egg on each patty.
