Recipe Ingredients for Corned Beef & Cabbage

6 lb corned beef brisket
1 3/4 lb onions
3 lb carrots
1 c malt vinegar
6 oz Guinness extra stout
1 T mustard seed
1 T coriander seed
1/2 T black peppercorns
1/2 T dill seed
1/2 T whole allspice
1 t bay leaves
4 lbs red potatoes
2 T corn starch
2 T flour
2 1/4 lbs cabbage

Recipe Directions for Corned Beef & Cabbage

Put corned beef in pan with 1 cup coursely chopped onion & 1 cup coarsely chopped carrots. Add all liquid ingredients & spices with enough water to just cover the meat. Cook for 2 1/2 to 3 hours until meat is fork tender. Cut & add carrots, boiling onions, & potatoes. Cook 1 hour. Cut up cabbage & steam in juices from meat. Remove meat & vegetables. Add flour & corn starch to thicken gravy.
