Little corndog muffins! Got these from the Hungry Girl recipe book.

Recipe Ingredients for Corndog Millionaire Muffins

2/3 cup all purpose flour
1/2 cup yellow cornmeal
2 1/2 tablespoons splenda
2 1/2 tablespoons granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup canned creamed corn
1/2 cup egg beaters
1/2 cup fat free sour cream
7 fat free beef franks

Recipe Directions for Corndog Millionaire Muffins

  1. Preheat oven to 375 degrees.

  2. Mix flour, cornmeal, splenda, sugar, baking soda and salt in a bowl. In a separate bowl, mix the creamed corn, egg beaters, and sour cream. Stir in the corn and egg mixture into the flour mixture until combined.

  3. Cut 2 franks in half, leaving you with 4 cocktail-sized franks.Cut each of the halves into 6 pieces, leaving you with 24 "coins." Set aside.

  4. Chop the remaining franks into very small pieces and stir them into the batter mixture.

  5. Line 12 cups of a muffin pan and spray with nonstick cooking spray. Evenly distribute batter among the 12 cups. Top each muffin with 2 of the frank "coins."

  6. Bake in the oven for 20 to 25 minutes, until a toothpick inserted comes out clean. Let cool and enjoy!
