Recipe Ingredients for cornbread4 (from Happy Herbivore)

1 cup fat free buttermilk
1 1/2 cups yellow cornmeal
80 g Bob's Red Mill all purpose gluten free baking flour, 1/2 cup
3/4 tsp xanthan gum
1/4 cup Splenda
2 tsp baking powder
5 tbsp applesauce
1 tbsp agave
1 tbsp maple grove vermont sugar free syrup
1 tsp vanilla extract
2 pinches sea salt
1 tbsp lemon zest

Recipe Directions for cornbread4 (from Happy Herbivore)

  1. Preheat 350 F

  2. (if using soy milk instead of buttermilk, whisk it with 1 tsp vinegar or lemon juice until bubbly, then set aside)

  3. In large bowl, mix dry ingredients (cornmeal, flour, sugar, baking powder, salt)

  4. Add applesauce, agave, maple and vanilla to dry mixture (do not mix)

  5. (Re-whisk soy milk until foamy or) pour in buttermilk and mix about 10 times

  6. add zest, kernels if using and mix gently

  7. only whip as many times as needed

  8. For Muffins: bake 10-12 minutes, yields 9 small muffins

  9. For Bread: bake 30-35 minutes
