Recipe Ingredients for Cornbread [vegan]

1 cup whole wheat flour
4 servings cornmeal (1 cup)
1/4 cup organic sugar
2 tsp baking powder
1/2 tsp sea salt
1 cup Silk Soymilk Enhanced
1/4 cup Smart Balance vegetable oil
1 1/2 tsp Ener-G egg replacer
2 tbsp water
3/4 cup organic corn
1 tbsp cilantro, chopped

Recipe Directions for Cornbread [vegan]

  1. Preheat the oven to 400 F.

  2. In a large bowl, combine the flour, cornmeal, sugar, baking powder, and salt.

  3. In medium bowl, prepare the egg replacer as directed with the water. Pour in the soymilk and vegetable oil.

  4. Combine wet ingredients into the dry ingredients. Once mixed, add corn and cilantro; stir well.

  5. Pour mixture into baking dish or lined muffin tins and bake for 15-25 minutes.
