Makes 8 servings



Maple syrup is better for the body but not as sweet tasting in this recipe. Adding the pure vanilla extract adds some sweetness. Be sure to use unbleached flour.

Recipe Ingredients for Cornbread

1 1/4 cup flour
3/4 cup cornmeal
1 T baking powder
1/2 tsp salt
2 egg whites
1/4 cup maple syrup
1/4 tsp vanilla extract
2 T olive oil
1 cups milk

Recipe Directions for Cornbread

Preheat the oven to 400 degrees. Grease a 8-9 inch pan or a 8-10 inch cast iron skillet. Mix the dry ingredients together and set aside. Mix the wet ingredients separately. Add the dry to the wet and mix well. Add a tablespoon or so of milk if the batter is too stiff. Pour into the pan or skillet. Bake 20-25 minutes in pan and 30-35 minutes in skillet.
