Crunchy with a strong corn flavor thanks to stoneground cornmeal. Delicious!

Recipe Ingredients for Cornbread

1 3/4 cup cornmeal
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon kosher salt
1 egg
1 tablespoon flax seed, ground
3 tablespoon water
1 cup plain nonfat yogurt, European style
1 cup rice milk

Recipe Directions for Cornbread

  1. Measure and combine into a bowl, cornmeal, baking powder, soda, and salt.

  2. In a separate bowl whisk together egg, ground flax seeds, and water and let sit for a couple of minutes for flax mucilage to develop.

  3. In the meantime measure 1 cup yogurt and top off with rice milk. Whisk together to combine then add to flax egg mixture.

  4. Stir this mixture into the flour mix and stir well. Pour into lightly oiled rectangular pan and bake at 425 for 15-20 minutes (until golden brown on top with edges pulling away from the pan).
