Cornbread Recipe

This is the cornbread to go with the chili. I'm not sure on the serving size. I will have to measure next time I make it and cut into 16 slices for each 8 inch square pan. (or 8X12) Cut 8 slices length wise then down the middle to divide them in half. (serving size 1 1/16th of each pan.)

Recipe Ingredients for Cornbread

1 cup margarine
4 eggs
1 teaspoon baking soda
2 cups all purpose flour
1 1/3 cup white sugar
2 cups buttermilk
2 cups cornmeal
1 teaspoon salt

Recipe Directions for Cornbread

Melt margarine in skillet, remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in rest of ingredients until well blended and few lumps remain. Pour batter into two greased 8 inch square pans. Bake both at 375 for 30-40 minutes or until toothpick inserted comes out clean. Eat one for dinner that night with half the chili. Once cooled freeze the rest of the cornbread in either a zip top bag, in it's pan, tightly wrapped in plastic wrap. To thaw, let sit at room temperature, or in the fridge overnight.
