cornbread using whole wheat flour and applesauce instead of oil.. a bit strange, but a bit healthier.

Recipe Ingredients for cornbread

1 cup cornmeal
1 cup whole wheat flour
4 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
1 cup skim milk
1 large egg
1/4 cup unsweetened applesauce

Recipe Directions for cornbread

  1. preheat oven to 425

  2. spray pan (round cake pan) with non-stick cooking spray

  3. combine dry ingredients in medium bowl

  4. combine wet ingredients in small bowl (or in a 2c. liquid measuring cup)

  5. mix wet ingredients into dry, stirring just until moistened

  6. pour batter in pan

  7. bake for 23-25 minutes until crusty and golden

  8. flip onto plate and cut into 8-16 pieces (i did 16 in recipe because that's what i've been eating w/ soup)
