Based on joy of cooking recipe with substitutions. Recipe makes 1 8x8 pan - I consider this 8 large servings, the original recipe considers this 16 2"x2" servings.

Recipe Ingredients for Cornbread

1 1/4 cups cornmeal
3/4 cup whole grain flour
2 1/2 teaspoons baking powder
1 tbsp sugar
3/4 tsp salt
1/2 cup egg beaters
1 tbsp olive oil
1 cup lowfat buttermilk

Recipe Directions for Cornbread

  1. Preheat oven to 425 deg. Spray an 8x8 pan with cooking spray and preheat in oven.

  2. Whisk dry ingredients together.

  3. Add in wet ingredients. Combine just until blended.

  4. Bake 18-20 minutes until nicely browned.
