Cornbread that is quite plain but hearty and can be served with their maple pecan butter to make it fancy

Recipe Ingredients for Cornbread from Re-Bar cookbook

1 cup yellow cornmeal
1/2 cup whole wheat flour
1/2 cup unbleached flour
2 tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1 1/2 tsp salt
2 eggs, beaten
5 tbsp butter, unsalted
1 cup buttermilk

Recipe Directions for Cornbread from Re-Bar cookbook

  1. Mix the dry ingredients (if you have dehydrated buttermilk put the buttermilk mix in the dry ingredients and put 1 cup of water in the wet)

  2. Mix wet ingredients

  3. Pour wet ingredients into the dry but don't over mix

  4. Pour whole mixture into a greased glass pie pan or square brownie-size pan

  5. Bake at 400 degrees for 25 minutes (even if the toothpick comes out clean in the middle after about 20 minutes it will fall when it cools!)
