Cornbread Muffins Recipe

Good with chilli, soups, stews. Not too sweet.

Recipe Ingredients for Cornbread Muffins

1 cup cornmeal
1 1/4 cups flour
1/4 cups sugar
1/2 cups canola oil
1 cup milk
1 egg
1/2 tsp salt
1 tbsp baking powder

Recipe Directions for Cornbread Muffins

Mix dry ingredients together in bowl. Beat egg until frothy and then mix it with the oil and milk. Make a well in the centre of the dry ingredients, then add the wet ingredients. Mix until batter is moistened; it will be lumpy. Pour into paper cups in a muffin tin and bake at 400 degrees for about 20 to 25 minutes
