Delicious vegan cornbread muffins! These are sweet and can go along with dinner or breakfast.

Recipe Ingredients for Cornbread Muffins

1/3 cup brown sugar
1/3 cup white sugar
1 cup cornmeal
1 cup flour
3 teaspoons baking powder
1 cup light soy milk
1 banana
1/3 cup grapeseed oil

Recipe Directions for Cornbread Muffins

  1. Preheat oven to 375 degrees and set aside a muffin tin and paper liners.

  2. Blend dry ingredients, then form a well for the wet ingredients as when making muffins.

  3. With a whisk, beat banana until smooth. Add it, milk and oil to the dry ingredients.

  4. Mix well until combined - more mixing is needed than traditional muffins - then let mixture rest for 5 minutes. This allows the cornmeal to soak up some liquid.

  5. Divide mixture into muffin tin lined with paper muffin liners. If cups of the tin are unused, fill them half way with water.

  6. Bake for 20 to 25 minutes. Let cool 10 minutes before serving.
