A few special touches make this cornbread extra delicious, and perfect as a dinner side.

Recipe Ingredients for Cornbread Muffins - Extra Moist & Savory

12 oz Jiffy cornbread mix
1/3 cup low fat plain yogurt
1/3 cup 1% milk
2 eggs
1 tsp thyme
1 tsp black pepper, coarse ground
1/2 tsp paprika

Recipe Directions for Cornbread Muffins - Extra Moist & Savory

  1. Preheat oven to 375 degrees.

  2. Prepare muffin pan with papers, or spray with PAM.

  3. Combine all ingredients in a medium-sized mixing bowl.

  4. Pour batter evenly into muffin pan.

  5. Pick up pan about 1" from table and drop, carefully. Repeat. This step helps remove air bubbles from the batter.

  6. Bake muffins according to package directions, or until tops are light golden brown and a fork inserted in center of muffin comes out clean.
