I always try to get a low fat versions of things I love. I took out most of the sugar and fat used in the comon cornbread and added berries instead. Best served fresh out of the oven. Frezzes well, reheat in microwave.

Recipe Ingredients for Cornbread with Mixed Berries

1 cup polenta
1 cup whole grain flour
2 tsp baking powder
1 tsp salt
3/4 cup milk
1 egg
2 tbsp granulated sugar
1 cup mixed berries, frozen

Recipe Directions for Cornbread with Mixed Berries

  1. Preheat the oven to 400 F or 210 C.

  2. mix dry ingredients: polenta, flour, baking powder and salt in a bowl

  3. mix wet ingredients: milk, egg and sugar in a bowl

  4. mix the dry and wet ingredients

  5. poor it into a baking form (I always use parchment paper makes it easier to clean)

  6. add the berries on top and use a fork to mix it in the batter

  7. bake about 25-30 minutes or until a toothpick inserted comes out clean

  8. remove the cornbread from the from, let it cool down for a few minutes and cut it into pieces
