Recipe Ingredients for Cornbread 1

1 c kefir or buttermilk
84 g (4 T) agave nectar or maple syrup
1 c cornmeal
1 c whole wheat pastry flour
1/4 c olive oil
2 eggs
2 t baking powder
1/2 t baking soda
3/4 t salt

Recipe Directions for Cornbread 1

  1. Sift 1 c whole wheat pastry flour into bowl. Add 1 c cornmeal. Combine oil and kefir or buttermilk and mix into dry ingredients. Cover with damp cloth and let stand 12-24 hours. This breaks down phytates in the grain and releases nutrients.

  2. When ready to bake, preheat oven to 375 degrees. Spray 8 X 8 pan with cooking spray.

  3. Mix eggs and maple syrup into batter with whisk. Sift baking powder, soda and salt into small bowl and add to batter, mixing gently only until incorporated. Pour into prepared pan and bake 10 minutes at 375 then decrease oven to 350 and continue cooking for 15 - 20 minutes until toothpick comes out clean.
