Pancake-like side dish made with corn, cornmeal, and zucchini

Recipe Ingredients for Corn and zucchini griddle cakes

2 tablespoons light olive oil
1 tsp light olive oil
3 cups corn
1 small zucchini, diced
1 tsp salt
1 tsp pepper
2 large eggs
1/4 cup yellow cornmeal

Recipe Directions for Corn and zucchini griddle cakes

  1. In a large skillet, heat 1 tsp oil over medium heat. Add corn and zucchini and season with salt and pepper, if desired. Sautee until vegetables are slightly tender, about 5 minutes. Remove from heat and cool slightly.

  2. When vegetables have cooled, add eggs and cornmeal and whisk to combine. Heat 2 tablespoons oil over medium heat and drop the batter by 1/4 cupfuls onto hot oil. Fry for about 3 minutes per side.

  3. Serving is 2 1/4cup sized cakes.
